Ecuador and South America in general is one the biggest producer of bananas in the world, although the banana was imported primary in the 16th century. There are many different types of bananas and one of them is the plantain. The plantain is a staple food in the tropical and subtropical regions of South America, comparable to the potato in Europe. The plantain is just eatable when it is very well seasoned. Otherwise it has to be cooked or fried.
The bolon verde is a typical Ecuadorian breakfast served with coffee. The bolon verde is of plantain verde and mozzarella. The preparation is very easy and it is so delicious.
These are the ingredients needed:
4 plantains verde
1 grinded Mozzarella
1 tablespoon creamy butter
First the plantains have to be cooked about 20 minutes. After they are done, they have to be mashed and mixed with salt and butter. Then the shallot has to be chopped and also mixed with the mass of plantains.
Now you have to form a “hamburger” and put some mozzarella in the middle of this “hamburger”. Then forming a ball and the bolon de verde is ready for baking. There are two different ways to bake the Bolon de Verde. First they will be baked in the oven, coated with butter and at low temperature until the bolones are golden brown. Or the bolones are prepared in a pan with some lard.
Instead of serving hot coffee with the bolon de verde, it is also very tasty with green salad and a juice.
